By the quarter,
half or whole.

We raise the beast; you choose the cut sheet. Shares will be sold through Out the Farm Gate — coming soon.

What you are buying

A share of one animal.

This is not a box of steaks. You are buying a share of a particular beast — a quarter, a half or the whole animal — and every cut it carries comes with it: the steaks, but also the roasts, the slow-cook cuts, the mince and the bones.

Buying this way costs less per kilo than buying cut by cut, and it is how most farm-direct beef in New Zealand is sold. The trade-off is that you take the animal as it comes, and you need the freezer space for it.

What you do decide is the cut sheet: how thick the steaks, how large the roasts, how much goes to mince, whether you want the bones for stock and the fat for rendering. You set that on Out the Farm Gate and the butcher cuts to it.

How do I buy?

Soon — all shares will be sold through Out the Farm Gate, the farm-direct marketplace we sell through. You choose quarter, half or whole and build your cut sheet there.

What's a cut sheet?

It's how you tell the butcher what to make from your share — steak thickness, roast sizes, how much mince, which slow-cook cuts. Out the Farm Gate walks you through it.
